- 9 multi‑colored bell peppers (tops removed, seeds cleaned)
- 1 cup Phyllis Ann’s Veggie Flavored Jasmine Rice (cooked per package instructions)
- Tops from the peppers, diced
- 1 medium sized onion, diced
- 1 lbs. ground beef
- 1 tbsp vegetable oil (or preferred oil)
- 16 oz can fire‑roasted tomatoes
- 1½ cups cooked Veggie Flavored Rice
- 1 to 1½ cups shredded cheddar cheese (plus extra for topping)
- Phyllis Ann’s Steak House Seasoning (to taste)
🔥 Instructions
1. Prep the peppers
Cut tops off peppers, clean out seeds, rinse, and place upright in a baking dish. Bake at 375°F for 20 to 25 minutes to soften.
2. Cook the rice
Prepare 1 cup of Veggie Flavored Jasmine Rice according to package instructions.
3. Sauté the veggies
Dice the pepper tops and onion. Add a small amount of oil to a saucepan and sauté until tender.
4. Brown the beef
Add 1 lbs ground beef to the pan and cook until lightly browned. Season with Steak House Seasoning.
5. Build the filling
Stir in 16 oz fire‑roasted tomatoes, 1–1½ cups cooked rice, and 1 to 1½ cups cheddar cheese. Mix until cheese melts smoothly into the beef and rice.
6. Stuff the peppers
